Nice Tuscan-style Chicken


Ingredients:

4 skinless chicken breast halves
2 skinless chicken thighs
salt and black pepper
olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
300 g prosciutto or ham, chopped
3 cloves garlic, chopped
1 can diced tomatoes
cup of your favorite white wine
fresh or dry thyme
fresh or dry oregano
1 cup chicken stock (or broth made with cubes)
capers
fresh or dry parsley leaves



Preparation:
Season the chicken with salt and pepper. In a non stick skillet or Wok, heat the olive oil over medium heat. When the oil is hot, cook the chicken until it changes color on both sides. Set them aside.

Keeping the same pan over medium heat, add the sliced peppers and prosciutto or ham, and fry until the peppers have softened well and the prosciutto is crisp. Add the garlic and cook for 5 more minutes. Add the tomatoes, white wine and healthy pinches of oregano and thyme to taste. 

Return the chicken to the pan, add the stock, and bring the mixture to a boil. Reduce the heat and let it simmer, covered, until the chicken is cooked well through, about 30 minutes.
Add the capers and the parsley and serve hot. Enjoy.
